How long does a standing-seam metal roof actually last out here?

On a properly installed panel with the right coating for our sun and hail, forty to fifty years is a reasonable window. The panels outlast the fasteners and the sealant, so the maintenance work at year twenty or so is real. What kills metal roofs early is a fastening or flashing shortcut on the install itself. That's the part we take seriously.
